Crockpot Chicken and Stuffing

We love traveling to the mountains! The Smokies and Cherokee are always our go to. There’s so much to do and after a long day of hiking, visiting waterfalls, and checking out the local culture exhibits, we’re happy to have dinner ready when we get back to Indian Creek Campground. The campground had tent camping, camper/RV spots and tiny cabins. We got a tiny cabin and, you guessed it, lots of electricity for cooking! 

So what goes into the crockpot in the morning? 

16 ounce bag frozen mixed vegetables 

4 large chicken breasts

22 ounce can cream of chicken

One block cream cheese 

Mrs Dash seasoning (to taste) I use about a tablespoon 

1 1/2 cup chicken broth (double if you want a more soup like consistency) 

Let it go for the day on low. Stir up before serving. I mix up 2 boxes Stovetop Stuffing. Just follow the directions on the box and scoop over the soup. This will feed about 6 to 8 people, which is great for us because we usually always have a second family with us. Snuggle up with this in front of the campfire and enjoy a great meal to end the day!
